Mercy Lung’aho is a research scientist for the International Institute for Tropical Agriculture (IITA). She received her doctorate in food science and international nutrition from Cornell University. She is a member of the African Nutrition Society, the American Society for Nutrition, the Institute for Food Technologists, and a registered nutritionist at the Kenya Nutrition and Dietetics Institute, among others.
